Challah Bread French Toast with "Any Berry" Compote

My dad has always been the type of person who can eat whatever he wants and not gain any weight. He is known for having breakfast dessert (a cookie at 9am) or mid-morning cake. Beyond the fact that he can eat whatever he wants, he also has the diet of a middle schooler. Vanilla ice cream with chocolate sauce, peanut butter toast and goldfish are staples. One of his absolute favorites, however, is French toast. Not just for breakfast, but any time of the day. In fact, he will even come home from work midday and make French toast for lunch if he’s really craving it. While he generally just makes it with whatever bread we have around and slathers it in maple syrup, I created this beyond simple recipe to step it up a notch! The picture below shows a strawberry and blueberry compote, but you can really make this with any berry that you like!



Ingredients:

- 6 slices challah bread

- 3 eggs

- 3/4 cups milk

- 1/4 tsp cinnamon

- 1 cup berries

- 1.5 tbs white sugar

- 1 tsp lemon juice

- 1.5 tbs water


Recipe: The French Toast

1. Whisk together the eggs, milk and cinnamon in a bowl

2. Heat a griddle or cast iron pan with butter

3. Dunk both sides of each slice of bread into the egg/milk mixture and then place them on the griddle

4. Flip after a minute or two and cook the other side

Recipe: The Compote

1. In a small saucepan add your fruit, sugar, water and lemon juice

2. Let it simmer on medium/low heat, stirring occasionally for about 10 minutes

3. Put a spoonful on top of each slice of french toast and top with syrup or whipped cream if desired.
