The EASIEST shrimp tacos

Taco's are something that may seem daunting because they have so many different components, but they are really one of the easiest lunches or dinners to make to impress your guests. I always keep corn tortillas on hand in my house for when a taco craving hits (pro tip: you can keep them in the freezer and just heat them on the stove when you're ready to eat so that they last longer). Plus, It seems like I can always find SOMETHING to use as the filling and makeshift toppings if a craving for tacos comes unexpectedly. That, my friends, is how this shrimp taco recipe was born. I couldn't decide what I wanted to eat for lunch and saw the tortillas in my freezer. I rummaged around my kitchen and found plenty of ingredients for this taco recipe. The recipe took me under 20 minutes to make and ended up tasting so delicious.
Ingredients: for 2 servings
4 Corn Tortillas
12 peeled and deveined shrimp
1/2 tsp paprika
1 tbs. olive oil
1/2 tsp cayenne
1/2 tsp chili powder
Salt and pepper, to taste
1/2 diced white onion
1 diced tomato
Chopped cilantro, to taste
The juice of 1 lime (and slices for garnish)
1/2 avocado, sliced thinly
Hot sauce (optional)
Recipe:
Place your shrimp in a bowl with the juice of 1/2 of a lime, the olive oil, paprika, cayenne and chili powder
Let them sit for 5-10 minutes
While you are waiting, dice your tomato, onion, and cilantro and combine in a bowl with the juice of the other 1/2 of the lime and salt and pepper - now you have pico de Gallo.
Heat avocado or olive oil in a pan and place shrimp in the pan and let them cook for 3 minutes per side (less if they are smaller).
While your shrimp are cooking, slice your avocado thinly and start heating your tortillas. I like to do this on the stove in a pan.
Now, you are ready for assembly.
Take your warm tortilla and place the avocado slices in the middle. Then add your shrimp, pico de Gallo, and hot sauce if desired.
Top with another squeeze of lime juice and enjoy!

Modifications: if you don't like them spicy, you could also marinate your shrimp in olive oil, lime juice, cilantro and parsley!
