My Favorite Breakfast Sandwich

When I was a kid, my dad would make me and my brother bagel sandwiches for breakfast before school allll the time. To this day, I still think he makes them better than any famous bagel place. Now that I'm 22 and cook for myself, I've been trying to recreate and reinvent his amazing breakfast sandwiches. As I've gotten older, I've begun to add things like arugula or spinach and avocado to my sandwich. Green things that, growing up, seemed repulsive to me. However, as my sandwiches have moved farther away from the simple eggs and bacon my dad used to put on a bagel, one thing has always remained the same. The perfect fried eggs. Let me let you in what is, in my opinion, the best breakfast sandwich.

Ingredients
Bagel of choice (I prefer Everything)
Butter (This is KEY)
Two Eggs
Cheese - if you want (I don't always add it)
Arugula or Spinach
Avocado
Bacon
Hot sauce
Recipe:
Start cooking your bacon
Toast your bagel
While your bagel is toasting, heat a pan with butter or oil and crack your eggs to start cooking
Let the eggs cook until the yolk is still soft in the middle, but harder around the edges, you're going for a jammy yolk so that it doesn't spill everywhere, but we still get some yummy yolk
While your eggs and bacon are cooking slice your avocado and butter your bagel - you might think buttering your bagel is unnecessary if you're going to add bacon which creates a lot of grease, but trust me, it's worth it.
If you're using cheese- for the last few minutes of your eggs cooking, add your cheese on top of them so it melts
Add the avocado to the bagel
Add a little bit of spinach or arugula
Add your two eggs and bacon + some hot sauce
Cut it open & ENJOY!
