Clean out the Fridge Fried Rice:

When I was younger, my mom used to make me bacon & egg “fried rice” for breakfast. I used to think that it was the coolest thing ever that I was eating fried rice for breakfast.
As a kid, I figured that my mom must’ve been a genius in the kitchen to be able to make fried rice. To me, that was something that we only ate out at Chinese restaurants. While she really is a genius in the kitchen, as I got older, I realized that fried rice could not be easier to make. Better yet, it was completely customizable to whatever mood I was in, or more importantly whatever random things were in the fridge (or freezer).
Fast forward to Senior year of college when I actually start to use my kitchen and cook with my boyfriend. He is the type of person who makes enough food for a family of six every time he cooks. That meant a looottt of leftover rice in our fridge. At first, I felt like we were throwing away old rice all the time, until finally, I remembered that fried rice that my mom used to make all the time. If the nostalgia of the recipe itself wasn't enough to motivate me to make it, the taste definitely was. It is incredibly quick and easy to make and will seriously taste like you ordered takeout.
Ingredients:
· 2 cups of cold, day-old rice (you could use cauliflower rice if you preferred)
· 1 white onion, chopped
· 2 large carrots, chopped
· ½ cup broccoli, chopped
· 2 eggs
· 2 tbs Soy sauce
· 2 tbs Sesame oil
· 1 tsp Sesame seeds
Recipe:
1. Heat 1 tbs of sesame oil in a large pan or wok
2. Once the oil is hot, add onions, carrots, and broccoli (or any other veggies that you are using)
3. Cook until they begin to get tender
4. Once your veggies are tender, add in your rice
5. Make a well in the middle of your rice, and add in your two eggs
6. Scramble the eggs
7. Add in another 1 tbs of sesame oil and 2 tbs of soy sauce (or more, if you prefer)
8. Stir and let the rice get a little crispy
9. Serve and top with sesame seeds!
