Sweet Potato Breakfast Hash

Breakfast foods are my absolute favorite. Partially because they’re yummy but also partially because they’re generally pretty easy to make and always satisfying. A hash is a great way to get in a lot of veggies and protein to keep you full until lunch. It’s also the perfect menu item to impress your friends with if you’re having people over for brunch. They will be shocked that you made something so beautiful and delicious, when really, it is so easy. You can definitely use regular potatoes instead of sweets if you prefer and add any other meats or cheeses.
Ingredients:
· 2 sweet potatoes, cubed
· 2 sausages, crumbled (chicken, turkey or pork are fine)
· 1 Bell pepper, chopped
· 1 onion, chopped
· 2 handfuls of spinach
· 1 tsp. paprika
· ½ tsp. cumin
· ½ tsp. cayenne
· 2 eggs
· Drizzle of hot sauce (optional)
· 1 tbs. Avocado oil
Recipe:
1. Cut sweet potatoes into cubes
2. Chop onion and bell pepper into small pieces
3. Heat up 1 tbs of avocado oil in a large cast iron pan
4. Add sweet potatoes, paprika, cumin and cayenne to the pan
5. Let the sweet potatoes cook for 4-5 min, then add the peppers and onions
6. Remove sausages from casings and crumble into the pan
7. Season everything with salt and pepper
8. Let everything cook for 10 more minutes, until sweet potatoes are tender but crispy
9. Add in the handfuls of spinach
10. Once spinach has cooked a little, make two wells for eggs and crack them in- alternatively, you can cook two fried eggs separately and put them on top of the hash
11. If the eggs are not cooking fully, cover the pan to let the whites cook
12. Once eggs are cooked, serve with hot sauce (optional)
